Ingredients Lazy Braised Potatoes in Leftover Beef Sauce (Zero Waste, Maximum Flavor)

  • Leftover beef sauce (garlic + soy + vinegar base)

  • 6–7 medium Yukon Gold potatoes, peeled and cubed

  • carrots (baby or regular) — optional

  • salt (add at the start)

  • black pepper (add at the start)

  • Optional garnish: green onion, dill, parsley

    Directions

    Step 1. Prep the vegetables.Peel and cube the potatoes. Slice carrots if using.

    Step 2. Sauce base.Pour leftover beef sauce into a deep pan or skillet. Bring it to a simmer.

    Step 3. Add veggies.Add the potatoes and carrots directly into the sauce.

    Step 4. Season immediately.Sprinkle salt and black pepper at the very beginning. This ensures potatoes absorb flavor and won’t taste bland.

    Step 5. Cover and simmer.Put the lid on — this step is magic. Cook over medium heat for 30–40 minutes, stirring once or twice, until potatoes are fork-tender and melt in your mouth.

    Step 6. Finish & serve.Top with green onion or herbs (optional). Serve hot as a cozy side or even as a main dish.

    My Tips

    • Don’t waste sauce: any leftover beef or chicken broth works for this recipe.

    • Not a fan of carrots? Skip them or add zucchini instead.

    • The lid is your best friend: it makes veggies extra soft and tender.

    • If I had dill, I’d definitely add it — but cooking is about using what you have.
